Valpolicella has always had a long tradition of growing white grapes along with black grape varieties. The grapes are pressed in February and are then left in contact with the marc, till the latter, having conveyed all the aromas, “separates” from the must (formation of the cap). Ageing is then carried out in small wooden casks.

ORGANOLEPTIC NOTES
Golden yellow color. Intense and characteristic with vanilla, sugared almond, honey and cinnamon. Complex and harmonic, sweet, enveloping, full and delicate.
PAIRINGS
Excellent with any dessert. When accompanying strong-flavoured spicy cheeses, honey and mostarda this wine displays a remarkably unique and unconventional note. Serve cold as a perfect end of a meal.

Spumante Prosecco
Extra Dry
The careful sorting of the Glera grapes for the production of Prosecco and the art of wine making are essential elements of this wine. The “re-fermentation” which takes place with the Charmat method, through the yeasts stirrer, to enhance the quality of the wine, creates a charming, extremely fine and persistent perlage.

ORGANOLEPTIC NOTES
Straw yellow with greenish shades, aromatic, scented as wild flowers, apple and linden. It is soft, mellow, with an heady perlage.
PAIRINGS
Excellent as an aperitif, but its character makes it suitable for any kind of food.

Grappa di Amarone
It comes from the marc of the king of Valpolicella wines, the Amarone. A precious distilled with an intense, enveloping and soft aroma and a full, fruity, flavour which reminds of the original grape. This classic meditation grappa is also excellent chilled after a meal or mixed with coffee.

50% Corvina, 20% Corvinone, 20% Rondinella, 10% Molinara, Oseleta e Turchetta.
VINEYARDS LOCATION
San Pietro in Cariano.
DISTILLATING METHOD
The fermented and selected marc, after racking and a light pressing, are taken to the distillery still soaked with must and processed immediately. A full-bodied and fragrant grappa is guaranteed, with a higher alcohol content, suitable for a long ageing in barrique. The distillation takes places around February with discontinuous steam and low-pressure system.

Blond yellow color coming from the barrique ageing. Deep, concentrated aroma of dried fruits, while in the mouth the taste is harmoniously robust and warm.
