2007 has been a particularly good year, especially for the grapes from our hillside vineyards.
The soil and the microclimate, highly suited, a regular climatic trend, with a warm winter with few rains, a good summer and a windy autumn with strong temperature ranges are the architects of the richness of perfumes and of the vigorous structure of this wine.
Passion and experience, to exalt the potential of this micro-zone at best, have animated the selected collection, bunch by bunch, of the best grapes to be put in the drying sheds. During the long rest the physical, chemical but above all biological variations take place inside the berries to guarantee their natural transformation into “unique” berries.
Pressing after 120 days from the harvest and very long fermentation with alternating pumping over and delestage, that is a soft washing of the pomace for the release of extracts, aromas and color in the must/wine, are the next steps to improve the quality of the final product.
Amarone 2007 continued its maturation in small oak barrels and drums for a period of over four years.
Over 20 months after bottling are needed to complete its ageing, to make it perform at its best and explode at the opening, with a little oxygenation, in its purest and deepest organoleptic identity.
Poured in a wide crystal chalice, the deep ruby color with a light orange rim and narrow and persistent tears prepare for unique sensations.
On the nose a wide range of aromas, from cooked fruit and black cherries in spirit, plums and raspberries, to the aroma of pipe tobacco, from spices such as cinnamon, white pepper, dried aromatic herbs to leather, in a continuous and prolonged journey through intriguing sensations.
The impact in the mouth, at the first sip, is joy, softness, fullness and harmony. If you let it rest for a moment, this Amarone 2007 transforms, expanding them, all the scents and offers intense emotions, both paired with meat dishes, from braised meat to game, from roasted to grilled meat, both to accompany aged strong cheese. It becomes absolute sipped and tasted between meals, as a meditation wine or in good company.

A new way to savor the values of always. Amarone Famiglia Farina expresses the intent to revisit in the packaging and in the style the same one that was produced by our grandparents in 1968, the year of the official recognition of the DOC (Denomination of Controlled Origin). Seductive combination of tradition and innovation, result of experience and winemaking evolution, this wine makes classicism its essence. The drawing off in cement, the maturation in Slavonian oak barrels and the refinement in bottle without filtration, make it ethereal and spicy on the nose, dry, fruity, warm and velvety on the palate. Elegance, softness and persistence its distinctive characters.

70% Corvina, 10% Corvinone, 10% Rondinella, 10% Molinara.

AGEING

After a few cleaning rackings, maturation for 24 months in Slavonian oak barrels of 20 and 30HL. Refinement in the bottle without filtration.

ORGANOLEPTIC NOTES

Ruby-garnet color; on the nose it’s ethereal, spicy, black cherries, cocoa and balsamic notes. Warm, dry, velvety, full-bodied, powerful elegant on the palate.

Excellent with roast, game, braised meat and aged cheeses.

Superbe wine, pride of Valpolicella Classica, born from the careful selection of grapes dried in the typical fruit drying sheds for about 4 months. The meticulous care of the grapes during the drying and the right maturation first in barriques and then in Slavonian oak barrels, develop complexity of scents and flavors. Elegant, smooth, balanced, it expresses tradition, terroir and passion.

GRAPE VARIETIES

50% Corvina, 20% Corvinone, 20% Rondinella, 10% Molinara, Oseleta and Turchetta.

San Pietro in Cariano.

AGEING

After two more cleaning rackings, 24 months maturation, 30% in barriques, 70% in Slavonian oak barrels, following evolution in the bottle.

ORGANOLEPTIC NOTES

Ruby red colour with garnet tinges. Ethereal, spicy, with cherry hints, sour cherry, raspberry, currant in alcohol, cocoa and balsamic notes. In the mouth is warm, full, of great structure, fine and balanced.

PAIRINGS

Excellent with game, roast meat and mature hard cheeses.

Recioto della Valpolicella

Classico DOCG

This wine has a great personality, it is obtained by selecting only a particular kind of grapes from the Valpolicella Classica region: the “recie”, the “wings” of the clusters, the sweetest and straggliest part. The vinification takes place in two steps at the end of January, after the grapes’ drying in traditional fruit drying sheds. The wine is left to rest in the bottle for almost one year in order toreach its peak in terms of quality while being still young.

60% Corvina, 20% Rondinella, 5% Molinara, 15% other varieties.

AGEING

Some months in stainless steel, following evolution in the bottle.

ORGANOLEPTIC NOTES

Deep ruby red colour. Floreal and fruity scents, it reminds of violet and wild rose, becoming a wonderful mix of raspberry, redcurrant and sour cherry jam. Velvety, pleasant taste, smooth, sweet but never cloying.

PAIRINGS

Excellent dessert wine, to be tasted with pastries with chocolate.
